Sweet-n-Spicy Popcorn

This is a popcorn seasoning from an episode of Diners, Drive-Ins and Dives. On the episode they gave the ingredients (most of them) but I had to do some trials to adjust the proportions. The one unique technique used was to dry the brown sugar.

Ingredients

  • 1 Cup dark brown sugar
  • 1 tbls salt (kosher)
  • 1 tbls chile powder or mixture of ground dried chiles (guajillo, pasilla, ancho, chimayo, chipotle)
  • 1 tsp cayenne or hot ground chiles
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp mustard powder
  • 2 tsp cumin
  • 1 tsp coriander
  1. Line a cookie sheet with parchment paper. Spread the brown sugar across the paper. Roast in the oven set to 170 to 200 F on convection (if your oven does not have convection bake setting will work). Roast for 5 mins. Check often to make sure not to burn. Remove when the sugar is dried.
  2. If using Coriander and Cumin seeds, place in a skillet on the stove to roast over medium heat until fragrant. When down, ground into a powder.
  3. In a jar or contains, mix all ingredients.
  4. To use on popcorn, sprinkle the season on hot popcorn or popcorn which has been tossed with melted butter.
