This is a popcorn seasoning from an episode of Diners, Drive-Ins and Dives. On the episode they gave the ingredients (most of them) but I had to do some trials to adjust the proportions. The one unique technique used was to dry the brown sugar.
Ingredients
- 1 Cup dark brown sugar
- 1 tbls salt (kosher)
- 1 tbls chile powder or mixture of ground dried chiles (guajillo, pasilla, ancho, chimayo, chipotle)
- 1 tsp cayenne or hot ground chiles
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp mustard powder
- 2 tsp cumin
- 1 tsp coriander
- Line a cookie sheet with parchment paper. Spread the brown sugar across the paper. Roast in the oven set to 170 to 200 F on convection (if your oven does not have convection bake setting will work). Roast for 5 mins. Check often to make sure not to burn. Remove when the sugar is dried.
- If using Coriander and Cumin seeds, place in a skillet on the stove to roast over medium heat until fragrant. When down, ground into a powder.
- In a jar or contains, mix all ingredients.
- To use on popcorn, sprinkle the season on hot popcorn or popcorn which has been tossed with melted butter.
