Aioli

There are a lot of Aioli recipes. It not too difficult to make but You will need a immersion blender, food processor or blender. I like using a immersion blender. You can make it using a whisk but will need someone else dribble the oil as you whisk. Following recipe is pretty heavy with garlic which mellows as you let it rest in refrigerator.

  • 1 egg
  • 1 egg yolk
  • Juice of a lemon
  • Salt
  • Garlic – 4 to 8 gloves depends how spicy you like it
  • Olive – good virgin one is best
  • Container for dribbling olive oil e.g small pitcher, bottle,

In your blender container (mine is the flask container which came with by immersion blender), add the eggs, couple pinches of salt and grate the garlic in. I use a microplane but you can use a grater or a garlic press. Cover the mixture with olive oil.

Start your blender on low to mix the ingredients. You should see the oil and egg begin to emulsify. Start slowly dribbling in olive oil while you are blend. Don’t add the olive oil too quickly since it will break the emulsion. Continue add oil until you have doubled the initial mixture. Increase the speed of your blend as you go. The end result should be like a mayo.

Add half the lemon juice and blend. Taste for salt and lemon flavor. Adjust the taste as you like.
